I don't know why water is so fascinating, but it is. Just sit and watch the fountain do its thing, any time of year. Summer is great for people watching, but winter... it's just you and the water. Why IS that so fascinating? (then go warm up in the KEXP gathering space)

Have been to concerts at Seattle Center. The seats are comfortable, the bathrooms clean and well appointed. Have not availed myself of all the amenities and it has been awhile since I've been there, but it is a lovely place.

Seattle Center's Armory(Food Court), has some really great options to eat, as well as there are a few Food Vendors otherwise in the Seattle Center. I find these options way better for lunch, than the cafes & restaurants nearby.

Use the monorail to get from Seattle Center to the Cheesecake Factory. You can walk a little and only have to park once. The walk will do you good especially if you have been eating a lot. So many things to see between the waterfront and the Space Needle.

I would book a cheaper room with a shared bathroom again.
